How it works

Beetroot's primary mechanism is dietary nitrate conversion to nitric oxide via the enterosalivary nitrate-nitrite-NO pathway. Ingested nitrate is concentrated in saliva, reduced to nitrite by oral bacteria, and then converted to NO in tissues - especially under hypoxic or low-pH conditions characteristic of exercising muscle. NO then activates soluble guanylate cyclase, producing cGMP and causing vascular smooth muscle relaxation, vasodilation, and improved oxygen/nutrient delivery.

The exercise performance mechanism involves multiple effects: improved exercise economy (lower oxygen cost for given work output), enhanced muscle perfusion, improved mitochondrial efficiency (NO modulates mitochondrial respiration), and faster oxygen kinetics at exercise onset. Combined effects produce 1-3% performance improvements - small but meaningful in competitive athletics.

The cardiovascular mechanism involves direct vasodilation reducing systemic vascular resistance and BP, plus improved endothelial function and arterial elasticity. The cognitive mechanism involves increased cerebral blood flow (especially to prefrontal cortex), supporting cognitive performance. Beetroot's betalains provide antioxidant and anti-inflammatory benefits that complement the NO effects.

Dose-response boundary: nitrate-rich beetroot altered plasma nitrite and oxygen cost dose-dependently, with no further tolerance benefit at 16.8 versus 8.4 mmol nitrate.

The results indicate that whereas plasma [NO2(-)] and the O2 cost of moderate-intensity exercise are altered dose dependently with NO3(-)-rich BR, there is no additional improvement in exercise tolerance after ingesting BR containing 16.8 compared with 8.4 mmol NO3(-).

Safety boundary: a systematic review warns that beetroot juice may raise nitrate above acceptable intake and promote endogenous N-nitroso-compound formation.

Drinking BRJ may easily increase nitrate intake above the acceptable daily intake, which is known to stimulate the endogenous formation of N-nitroso compounds (NOC's), a class of compounds that is known to be carcinogenic and that may also induce several other adverse effects.
